Roasted Plum Tomatoes

  • 2 plum tomatoes (1 per person), halved lengthwise
  • 1 Tablespoon sugar
  • 1 Tablespoon olive oil
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon ground pepper

Step 1

Preheat oven to 425 degrees. Place tomatoes on a greased, rimmed baking sheet; toss with oil, thyme, salt, and pepper until coated. Arrange in a single layer, cut sides up. Bake until soft, about 15-20 minutes.
