Quinoa Chia Balls

Ingredients

  • 2/3 cup white quinoa
  • 150 g pitted dates
  • 1 cup macro wholefoods market nut butter
  • 2/3 cup almond meal
  • 2 tbs black or white chia seeds
  • 2 tbs cocoa
  • desiccated coconut or melted dark chocolate, to serve

Preparation

Step 1

Place quinoa in a saucepan with 1 and 1/3 cups water. Bring to boil. Reduce heat and simmer for 10 minutes or until all the water has been absorbed. Cool.

Process dates with 2tbs of boiling water in a food processor until a thick paste forms. Add quinoa, nut butter, almond meal, chia seeds and cocoa. Process to combine.

Use damp hands to roll mixture into balls. Chill to firm. Coat in coconut or chocolate.
