Ingredients
- 4 large cloves garlic
- 1 medium onion
- 8 tablespoons butter
- 16 tablespoons all-purpose flour
- 4 cups chicken or ham stock
- 4 cups light cream
- 3 cups grated sharp Cheddar
- 1 tablespoon basil
- Salt and black pepper to taste
- 1/2 cup bacon bits (optional)
Preparation
Step 1
In a saucepan, sauté onion in butter for 5 to 7 minutes over a medium heat. Add bacon and heat for 2 minutes. Remove from heat and blend in flour. Return to medium heat. Add stock and cream. Cook until thick. Add cheese and basil. Stir until the cheese melted. Add salt and pepper to taste. Remove from heat and let set for 5 minutes.
Garnish with parsley and bacon bits. Serve with hot Italian bread.
Notes:
• For variations, add any of the following items. Adjust the quantity depending on the combination of items added:
- 1 1/2-2 cups broccoli
- 2 cups chopped ham
- 2 cups cooked potatoes, diced
