Hummus (basic, Roasted Pepper, Pesto)

Ingredients

  • 2 cups garbanzo beans
  • 1/3-1/2 cup liquid (water, or liquid from canned garbanzo beans...or part of each)
  • 2 tablespoons tahini
  • 2 garlic cloves
  • juice of 1 lemon
  • salt & pepper
  • red roasted pepper (optional)
  • store-bought pesto (optional)

Preparation

Step 1

In a blender puree all ingredients until they are well incorporated and smooth. Add more liquid/salt/pepper if needed. Feel free to add olive oil to taste.

I then divided the basic hummus into 3 parts: one remained as is, and I added a few tablespoons of store-bought pesto to the 2nd part: Pesto Hummus.

I put the last portion of basic hummus back into the food processor and added one roasted pepper and pureed the whole thing together to make Roasted Red Pepper Hummus.
