Raw Vegan Pecan Pie Ice Cream

Ingredients

  • 4 cups raw pecans
  • 5 cups filtered water
  • 1 1/4 cup pitted dates
  • 1 Tbsp maple syrup
  • 2 tsp alcohol free pure vanilla extract
  • 3/4 tsp ground cinnamon
  • pinch ground nutmeg
  • pinch of Celtic sea salt
  • 1 cup roughly chopped pecans stirred with 1 Tbsp maple syrup to stir through ice cream

Preparation

Step 1

1.Blend everything but the chopped pecans in your Vitamix until smooth and creamy.
2.Chill the mixture for at least 2 hours, then churn in an ice cream maker according to the manufacturer’s instructions.
3.Fold in the chopped pecans, and freeze until ready to serve.
4.Serve with crushed pecans and a drizzle of maple syrup. YUMMO!
5.Makes 1 quart.
