Spanish Rice

Ingredients
- 2 to 3 Tablespoons of Olive Oil
- 1 1/2 Cups Long Grain Rice [Comment] Do Not Use Minute Rice
- 1 Large Tomato [Fresh] – Coarsely/Medium Chopped
- 1/2 Can Tomato Sauce [do not put to much in --- this is mostly for color]
- 1/2 Onion – Coarsely/Medium Chopped
- 1 Green Bell Pepper – Coarsely/Medium Chopped
- Garlic [Fresh or Powder] To Taste – Do Not Over Do
- Salt and Pepper --- To Taste
- 3 1/2 Cups Water {or could use Chicken Broth}
- OPTIONAL INGREDIENTS {Strongly Suggested}
- Small Amount of Olive Oil [in addition to the olive oil listed above]
- 3/4 Stalk of Celery – Coarsely/Medium Chopped
- 1 Red Bell Pepper – Coarsely/Medium Chopped
- 1 1/2 Onion [in addition to the onion listed above] – Coarsely/Medium Chopped
- If using Fresh Garlic, I would sautee it with these optional vegetables.
- *Keep This Onion Separate From the Onion Listed Above*

Preparation
Step 1
With a very small amount of Olive Oil, Sautee together the Optional Ingredients:
Celery, Green & Red Bell Pepper, Onion and Garlic – Do Not Over-Sautee; Set to the side {in bowl}.
{use only an amount of oil to sautee that will be absorbed into the vegetables – otherwise you
risk making your end result will contain to much oil]
In the same pan that you sautéed the Optional Ingredients – {in a pan with an approx 3” depth}
Place the 2 to 3 Tablespoons of Olive Oil in the Pan
Add 1 ½ Cups Comment Long-Grain Rice [and stir the rice into the oil]
With the heat at Medium, brown the rice in an un-covered sautee pan {pan/approx 3” deep}
When the Rice has browned, if you are using the Sauteed Optional Ingredients, Add them to the browned Rice; THEN/OR BEGIN TO ADD TO THE BROWNED RICE {if not using the optional ingredients}
3 ½ Cups Water/or Chicken Broth [be careful, in adding the first liquid to the hot mixture with oil}
½ Medium/Coursely Chopped Raw Onion;
Chopped Fresh Tomato
*Green Bell Pepper* {Raw, if did not sautee it with the Optional Ingredients}
½ Can Tomato Sauce
Salt, Pepper, Garlic Powder {if used fresh garlic and the optional vegetables, you may not
need to add any garlic power at this point}
Cover the pan and cook on medium heat {approx: 30 to 45 Minutes; Do Not Overcook} Check often
GENTLY STIR THE INGREDIENTS – FROM THIS POINT TRY TO NOT STIR THE INGREDIENTS --- BUT YOU MAY NEED TO ADD SOME ADDITIONAL WATER/STOCK. STIRING, OR YOUR OVER-STIRING WILL CAUSE THE RICE TO BECOME MORE LIKE POTATOES VERSUS RICE!!! *KEEP A CLOSE EYE ON THE MIXTURE TO NOT OVER-COOK—WHEN DONE, REMOVE FROM HEAT & UN-COVER - AND PLACE IN SERVING BOWL; IF MAKING AHEAD OF TIME; COOL COMPLETELY BEFORE SEALING FOR STORAGE; TO RE-HEAT; USE THE MICROWAVE.
