Shrimp/Chicken Creole - New Orleans Style

Ingredients

  • 1 tbsp. vegetable oil
  • 1 cup finely chopped onion
  • 1/4 cup chopped celery
  • 1/2 cup chopped red bell pepper
  • 6 garlic cloves, crushed
  • 1 - 16 oz. can diced tomatoes, drained
  • 1 - 8 oz (or less) can tomato sauce
  • 1 bay leaf
  • 1 tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 lb.+ shrimp or chicken
  • 2 tbsp. flour
  • 1/2 cup water or as needed, possibly less
  • 2-3 cups cooked rice

Preparation

Step 1

Heat oil, add onion, celery, pepper, garlic - saute' until soft. Add tomatoes/sauce, bay leaf, sugar, salt, pepper. Reduce heat and cook 15 min. Place shrimp/chicken in plastic zip bag with flour, shake until coated. Add shrimp/chicken until cooked. Add water if needed. Remove from heat and let sit for 4-5 min. Serve over rice.
