Ingredients
- 1 tbsp. vegetable oil
- 1 cup finely chopped onion
- 1/4 cup chopped celery
- 1/2 cup chopped red bell pepper
- 6 garlic cloves, crushed
- 1 - 16 oz. can diced tomatoes, drained
- 1 - 8 oz (or less) can tomato sauce
- 1 bay leaf
- 1 tbsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 lb.+ shrimp or chicken
- 2 tbsp. flour
- 1/2 cup water or as needed, possibly less
- 2-3 cups cooked rice

Preparation
Step 1
Heat oil, add onion, celery, pepper, garlic - saute' until soft. Add tomatoes/sauce, bay leaf, sugar, salt, pepper. Reduce heat and cook 15 min. Place shrimp/chicken in plastic zip bag with flour, shake until coated. Add shrimp/chicken until cooked. Add water if needed. Remove from heat and let sit for 4-5 min. Serve over rice.
