Ingredients

  • cups boiling water

  • 1

    pkg (8 serving size) or 2 (4 serving size) peach flavor gelatin

  • cups cold water

  • 1

    can or jar (20 oz) pineapple chunks, drained

  • 1

    can (11 or 15 oz) mandarin oranges, drained

  • cups thawed whipped topping

Directions

1) Stir boiling water into gelatin in lrg bowl at least 2 mins until completely dissolved . Stir in cold water. Refrigerate 45 mins or until slightly thichened. Remove 1 1/2 cups geletain; let stand at room temperature. 2) Stir drained fruit into remaining gelatin. Spoon into 6 cup mold sprayed with nonstick cooking spray. Refrigerate 15 mins or until set, not firm. 3) Whisk whipped topping into reserved gelatin until blended. Spoon over gelatin layer in mold. Refrigerate 4 hrs or until firm. Unmold Unmolding: Dip mold in warm water for about 15 secs. Gently pull gelatin from around edges with moist fingers. Place moistened serving plate on top of mold. Invert mold and plate; holding mold and plate together, shake slightly to loosen. Gently remove mold.
