Ingredients
- 1 can chickpeas
- 1 cucumber unpeeled & finely chopped
- 1 cup grape tomatoes halved
- 1/4 cup sweet onion, finely chopped
- 2 tsp minced garlic
- 1.5 tbsp finely chopped fresh parsley
- 2 tbsp finely chopped fresh basil
- 4 oz fresh mozzarella, finely diced
- 1 tbsp olive oil
- 2 tbsp balsamic or red wine vinegar
- 1/4 tsp salt

chill at least one hour
