BLUEBERRY LEMON MUFFINS

Ingredients

  • TOPPING:
  • 1/4 cup butter, margarine, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup milk
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 finely grated rind from lemon
  • 1 cup blueberries, fresh or frozen (don't thaw)
  • 1 juice of lemon
  • 1/4 cup granulated sugar

Preparation

Step 1

Cream butter and sugar together well. Beat in egg. Add vanilla and milk. Stir.

Add next 4 ingredients. Stir just to moisten.

Quickly fold in blueberries. Fill greased medium muffin cups 3/4 full. Bake in 400 oven for 15 to 20 minutes until an inserted wooden pick comes out clean. Let stand 5 minutes before removing from pan.

Stir lemon juice and sugar in small saucepan over medium heat until sugar dissolves. Brush over hot muffins.
