Cilantro Lime Grilled Chicken is a delightful dish to try at your next barbecue. The trick is to prepare the marinade ahead of time and let the chicken bask in the flavor for several hours or even overnight. The bright flavor of lime and cilantro is wonderfully summery, even in the dead of winter.

Ingredients

  • 3 boneless chicken breasts
  • 2 Tblsp. olive oil
  • 2 tsp. lime zest
  • 1/4 c. lime juice
  • 4 Tblsp. cilantro, minced
  • 1 tsp. sea salt
  • 2 cloves garlic, minced
  • 2 Tblsp. parsley, minced
  • 1/2 tsp. crushed red pepper

Preparation

Step 1

Put the chicken breasts between two sheets of plastic wrap and carefully pound out to an even thickness. Set the chicken aside.

In a bowl, mix the lime zest and juice, cilantro, salt, garlic, parsley and red pepper until well combined. Add the chicken and toss until completely coated in the marinade. Allow to marinate in the fridge for a minimum of two hours.

Heat the grill to medium high heat. Drain the chicken breasts and lightly pat dry with paper towels. Rub the meat with oil and place on the grill. Cook for 2-4 minutes per side, or until cooked through. Serve hot with your preferred side dishes.
