Butternut Squash Puree

Ingredients

  • 1 medium butternut squash
  • 2 Tbsp. lite butter
  • 1/4 cup brown sugar
  • 1 tsp. kosher salt
  • Fresh ground pepper
  • 1/2 tsp. nutmeg

Preparation

Step 1

Poke holes in top of squash, place on paper towel in microwave, cook on high for 20 minutes until soft. Remove from microwave and cool slightly. (Optional: place squash on foil and place on cookie sheet. Heat in oven at 350 degrees F for 40 minutes until soft.)
Cut squash length-wise and remove seeds with spoon. Scoop out squash into mixing bowl. Add butter, sugar, salt, pepper, and nutmeg. Beat with a whip until smooth.
