Stuffed peppers, Mexican Style

Stuffed peppers, Mexican Style 0 Picture


  • 1/4 cup chopped onion
  • 1 tblsp garlic
  • 1 tblsp veg oil
  • 1 cup uncooked, or cooked, rice
  • 1 can beef broth
  • 1 can black beans
  • 2 lb ground turkey
  • 1 cup corn
  • 1/2 cup salsa picante
  • 1/2 cup crushed tortilla chips
  • 1 cup shredded cheese
  • 1 tsp cumin
  • 1 tsp chili powder



Step 1

Saute onion and garlic in oil. Add the rice till crisped. Add the broth and cook for 15 minutes and then cool. Add to the turkey along with the beans, corn, picante sauce, chips and spices. Fill peppers and top with more sauce, then more crushed chips with grated cheese. Bake @ 350* for 1-1/2 hour or till the peppers are softened.
