Ingredients
- 1 coriander plant (+ stem), well-washed
- 1 t (teaspoon) salt
- 2 cloves garlic
- 4 small fresh green chilies
- 1 T (tablespoon) castor sugar
- 1/4 cup fresh lime juice
- 2 T fish/ soy sauce

Preparation
Step 1
Chop coriander leaves coarsely and set aside
In a food processor combine
- coriander root
- salt
- garlic
- chilies
to make a paste
Add
- sugar
- lime juice
- fish sauce
and blend until sugar has dissolved
Stir in coriander leaves just before serving
Use within 24h
For longer keeping make without lime juice and coriander leaves. The base will keep well, covered, for several weeks in the fridge. Stir in coriander leaves and lime juice just before serving.
