Brisket of Beef and Potato Pancakes

Ingredients

  • 3-4 lb. Brisket of Beef
  • 1 envelope Lipton onion soup mix
  • 5 lg. onions peeled and thick sliced
  • garlic powder
  • salt and pepper
  • 1/2 cup water
  • 2 Tbsp. veg. oil

Preparation

Step 1

Sprinkle brisket with garlic powder, salt and pepper
Sear both sides of brisket in 2 Tbsp. veg oil
Add sliced onions over top then sprinkle envelope of onion soup over all
Add water, cover and bake 3 hours @ 300 degrees

Potato Pancakes:

2 eggs
1 small onion
1 tsp. salt
2 Tbsp. flour
1/4 teasp. baking powder
3 cups raw potatoes,peeled and cubed. Process ingredients and halfof potatoes in blender, then add rest of potatoes and blend.

Fry 1/4 cup fulls of mixture in cast iron frying pan in hot peanut or veg. oil
Then add rest of potatoes and blend.
