MINI ZUCCHINI QUICHES

Ingredients

  • 4 sprays cooking spray
  • 2 small zucchini, finely chopped
  • 1 large onion, finely chopped
  • 1 c shredded parmesan cheese (about 3 oz)
  • 6 large eggs
  • 1/2 c flour
  • 1/4 c finely chopped fresh basil
  • 3 T olive oil
  • 2 t baking powder
  • 1 t sugar
  • 1 t kosher salt
  • 1/2 t black pepper

Preparation

Step 1

Preheat oven to 375 degrees. Coat two 24-hole nonstick mini muffin pans with cooking spray (or make two batches).

Combine all ingredients in a large bowl, spoon about 1 heaping T mixture into each prepared hole, making sure to stir mixture in bowl after filling each one.

Bake until bottoms are golden brown and quiches are cooked through, about 15 minutes. Remove from oven and let cool for a few minutes; remove quiches to a wire rack to cool more (and repeat with remaining ingredients if necessary).

This recipe can be halved.
