Brussel Sprouts with Pancetta and Garlic

  • 1 T olive oil
  • 2 oz pancetta
  • 4 cloves garlice, minced
  • 1/4 t salt
  • 1/4 t black pepper
  • 1/4 c water



Step 1

1. Preheat oven to 450 degrees.
2. Toss all ingredients together except water. Place in 11 X 7 inch baking
pan. Spread into one layer.
3. Roast stirring halfway through, until brussel sprouts are brown on the e
edges, about 25 minutes.
4. Remove from oven, stir in water to deglaze, over moderately high heat,
scraping up brown bits.

Can be doubled.
