Ingredients
- 1 whole chicken (do not cut up)
- 1 diced large onion
- 2 peeled parsnips, sliced
- 1 huge carrot, sliced
- 1 tbsp. kosher salt
- pepper
- dill (optional)
Preparation
Step 1
Put veggies in pot. Put chicken on top. Cover with water. Bring to a simmer and add pepper. Skim foam. Cook for about one hour. Remove chicken and cut up.
Serve with thin noodles and/or matzo balls.
Make this ahead, chill and take off fat.
