Ingredients
- 1/2 head red or green cabbage, cored and shredded (1 lb / 6 cups)
- Salt
- 1/2 cup buttermilk
- 2 tbsp mayonaise
- 2 tbsp sour cream
- 1 small shallot minced, optional
- 1/2 tsp cider vinegar
- 1/2 tsp sugar
- 1/4 tsp Guldens mustard
- 1/8 tsp pepper
Preparation
Step 1
1. Toss shredded coleslaw and tsp salt in colander set over bowl. Let stand until cabbage wilts, at least 1 hour, up to 4 hours. Rinse under cold running water. Press but do not squeeze to drain; pat dry with paper towels. Place in large bowl.
2. Stir buttermilk, mayo, sour cream, shallot, vinegar, sugar, mustard, 1/4 tsp salt and pepper in large bowl. Por over cabbage and toss to combine. Refrigerate for 30 minutes and serve.
