Italian Chopped Salad

Ingredients

  • Vinaigrette:
  • 4 cups chopped or thinly sliced romaine lettuce
  • 1 (15 1/2 oz.) can garbanzo beans (chickpeas), drained
  • 1 red bell pepper, diced
  • 2 vine ripe tomatoes
  • 4 green onions, sliced
  • 1/4 cup parmesan
  • 1/4 cup sliced pitted Kalamata olives
  • 2 Tbsp. chopped basil
  • 1/4 cup balsamic vinegar
  • 2 Tbsp. olive oil
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. honey
  • 1 tsp. garlic
  • Salt and freshly ground pepper, to taste

Preparation

Step 1

Using a food processor with a slicing blade, thinly slice romaine lettuce, tomatoes, and green onions. Add garbanzo beans, diced red pepper, parmesan and olives.
Whisk dressing ingredients in a small bowl. Toss salad with dressing just before serving.
