Ingredients
- Vinaigrette:
- 4 cups chopped or thinly sliced romaine lettuce
- 1 (15 1/2 oz.) can garbanzo beans (chickpeas), drained
- 1 red bell pepper, diced
- 2 vine ripe tomatoes
- 4 green onions, sliced
- 1/4 cup parmesan
- 1/4 cup sliced pitted Kalamata olives
- 2 Tbsp. chopped basil
- 1/4 cup balsamic vinegar
- 2 Tbsp. olive oil
- 1 Tbsp. Dijon mustard
- 1 Tbsp. honey
- 1 tsp. garlic
- Salt and freshly ground pepper, to taste
Preparation
Step 1
Using a food processor with a slicing blade, thinly slice romaine lettuce, tomatoes, and green onions. Add garbanzo beans, diced red pepper, parmesan and olives.
Whisk dressing ingredients in a small bowl. Toss salad with dressing just before serving.
