Ingredients
- Crust
- 2/3 cup unsalted butter, chilled (11 tablespoons when halved)
- 1/2 cup sugar
- 2 cups flour
- Pinch of salt
- Filling
- 1 1/3 cups peach preserves such as Bon Maman
- 4 cups fresh sliced peaches
- Topping
- 1/2 cup flour
- 4 tablespoons butter
- 4 tablespoons sugar
- 1 (8-ounce) can almond paste
- 1/2 cup sliced almonds
Preparation
Step 1
Preheat oven to 350° F. Pulse the butter, sugar and flour in a food processor until crumbly. Press into bottom of a 9×13 pan. Bake for 10 minutes – it will not be brown. Spread peach jam evenly over the warm crust. Layer sliced peaches on top of jam.
Mix butter, almond paste, flour, and sugar by hand, so it’s nice and crumbly, with large and small chunks. Crumble on top of the peaches. Sprinkle with almonds.
Bake for 20 to 25 minutes till the topping is nicely browned.
