Ingredients

  • 6.6 lb of Light Liquid Malt Extract
  • 1 lb of Light Dried Malt Extract
  • 1 lb of Crisp Crystal 45L Malt (Crushed)
  • 1 oz of Summit Hop Pellets for Bittering
  • 1 oz of Chinook Hop Pellets for Bittering
  • 1 oz of Cascade Hop Pelelts for Flavor
  • 1 oz of Cascade Hop Pellets for Aroma
  • 11.5 g of Fermentis US-05 Ale Yeast
  • 5 oz of Corn Priming Sugar

Preparation

Step 1

Start with 2-1/2 gallons of water, Add grains to your muslin bag, soaking in the heating water until the temperature of the water reaches 160 degrees Fahrenheit. Do not steep the grains in water over 170 degrees, as this will result in a bitter flavor. Steep for 15 - 20 minutes. Remove the grain bag and sparge by running very hot - 190 or more over the bag to flush the sugar.

Bring the kettle to a boil and add the remaining malts and bittering hops while stirring constantly to prevent boil over. Boil time is 60 minutes. At 45 minute mark add the flavoring/aromatic hops and stir well.

When finished chill the wort (brew) in the kettle in a large sink filled with ice water, 20 pounds of ice and a laundry tub are recommended. Cool to 70 degrees as quickly as possible (no more than 20 minutes is best)

Add 2 gallons of cool water to the fermenter and pour the cooled wort into the fermenter, top with additional water as needed to make 5 gallons. Stir well to aerate and then pitch the yeast. Stir again and cover tightly to ferment.

When primary fermentation slows (~5 days) siphon into carboy for secondary fermentation, do not suck up the crud at the bottom of the fermenter. Ferment an additional week and then siphon back to fermenter for bottling. Add the priming sugar, stir well and bottle in sanitized bottles.

Age for two or three weeks. Enjoy
