Mashed Potatoes - Garlic, White Cheddar & Chipotle

Ingredients

  • 36 Cloves of Garlic
  • 1/3 cup olive oil
  • 5 lbs of Russet Potatoes, peeled, cut into 1 inch pieces
  • 2 cups of grated sharp white cheddar cheese about 8 oz(1/2 pound)
  • 4 oz cream cheese, room temperature
  • 1/2 stick unsalted butter, room temp
  • 1 1/2 teaspoon minced canned chipotle chilies

Preparation

Step 1

Preheat oven 350 degrees
Toss garlic w/oil in baking pan
cover w/foil; bake 45 min
cool, peel & chop
Cook potatoes in large pot of salt water for 25 minutes. Transfer to large bowl. Add garlic & remaining ingredients. Use electric mixer add salt & pepper to taste. Can be prepared 2 hours ahead of time. Cover; let stand at room temp. Rewarm, stirring constantly, before serving.
