Ingredients

  • 1 C chopped pecans or walnuts (optional) *
  • 1 1/4 C cake flour
  • 1/2 t salt
  • 3/4 t baking powder
  • 6 oz. unsweetened chocolate (chopped fine)
  • 12 T (1 1/2 sticks) unsalted butter (cut into 6-8 pieces)
  • 2 1/4 C granulated sugar
  • 4 large AA eggs
  • 1 T pure vanilla extract

Step 1

Pre-heat oven to 325 degrees.

Coat a 9x13 Pyrex baking dish lightly but evenly and thoroughly with butter on bottom and sides.

In a medium bowl, whisk to combine flour, salt and baking powder.

Use double boiler to melt chopped chocolate and butter; pour into large mixing bowl. (Option: Melt chocolate & butter in large bowl in microwave (high setting); 45 seconds, then 30 seconds, then 15 seconds until melted and smooth. Wisk to mix after each heating.)

Gradually whisk in sugar to melted chocolate / butter mix, adding 5-6 times until all sugar is added. Whisk in eggs one at a time. Whisk in vanilla.

Add flour in three additions, folding in with a spatula. (Be careful here as the flour will try to fly out of the bowl as it is being folded in….) After flour is mixed into batter, add toasted nuts (if desired).

Transfer batter to baking dish; spread evenly.

Bake 30-35 minutes; use toothpick to check if done.

* if using nuts, heat oven to 325 degrees; spread nuts evenly on baking sheet & toast in oven for 5-8 minutes. If mixing nuts into batter, add last, otherwise place on top after batter is in baking pan.

Serve warm with Blue Bell Homemade Vanilla ice cream. If you feel really adventurous, add some sliced strawberries, a little Kahlua and/or some Hershey’s chocolate syrup on top.
