Dilled Roast Beef (or Pork)

Ingredients

  • 3 # roast
  • 1 lg onion, sliced
  • mushrooms (optional)
  • 3-4 peppercorns
  • 1 bay leaf (optional)
  • 1/4 c beef stock or boullion
  • 3-4 lg dill pickles, chunked
  • 1 c sour cream

Preparation

Step 1

Put roast in oven at 325° with everything EXCEPT sour cream. Roast until tender. Add sour cream, return to oven until sour cream is warm (10-15 mn). Slice meat & serve with sauce. Be sure to remove bay leaf before serving.
