Loaded Yukon Gold Smashed Potatoes

Ingredients

  • 10 slices bacon
  • 12 small Yukon Gold Potatoes
  • 2 Tbsp olive oil
  • 1 tsp.fresh ground pepper
  • 11/2 cups store bought French onions
  • 8 oz. cheddar cheese
  • 1 to 2 minced green onions

Step 1

Preheat oven to 425.

Cook the bacon in a frying pan until crisp. Pat bacon dry on paper towel . Crumble bacon and set aside. Bring a large pot of water to boil. Add the potatoes and cook until 3/4 done. About 15 minutes. Drain and set aside. Brush the potatos with the oil and season with salt and pepper. Place them in a baking ish nd bake until fully cooked about 15 minutes. Smash the potatoes with a potato masher . Top with the bacon , fried onions and cheese . Bake about 5 minutes Add dollops of sour cream on top. Garnish with scallions to serve
