Carrot Cake

This recipe came from a Paula Deen show. It is TRULY amazing...like eveything she makes...mmm mmm yummy!

Ingredients
- cake:
- 2 c flour
- 2 c sugar
- 2 t baking soda
- 2 t cinnamon
- 1 t salt
- 4 eggs
- 1 1/2 c vegetable oil
- 3 cups grated carrots
- 1 1/2 c chopped pecans (optional)
- frosting:
- 2 8oz pkg cream cheese, room temp.
- 1 stick salted butter, room temp.
- 16 oz powdered sugar
- 1 t vanilla
- 1/2 c chopped pecans
Preparation
Step 1
350 degrees - preheat
grease and flour 3 9 inch round pans
line bottom of pans with parchment paper
In large bowl, combine flour, sugar, baking soda, cinnamon and salt. Add eggs and vegetable oil. Blend well. Add carrots and pecans
Pour into pans. Bake for apporx. 40 minutes. Remove from oven and cool for 5 minutes. Remove from pans. Allow to cool completely before frosting.
Frosting: add all ingredients except nuts. Blend until smooth. Frost. Top with chopped nuts.
