Grated Cheddar Cheese [large grated cheese – I do not use a finely grated cheese]
[I use a Wisconsin Cheese that is carried by Costco – it is a mild cheddar;
but I have used Kraft before I started shopping at Costco. If I buy Kraft

Kraft Real Mayonnaise [I do not use Hellman’s nor can you make this with a
mayo-salad dressing—and it will not be as tasty if you
use a light version of the Kraft Real Mayonnaise]
Large Grind Black Pepper
Garlic Powder [do not use Garlic with a Salt or Seasoning added]
Roasted Red Bell Peppers [You can roast your own; but I normally purchase
them in a jar-packed in oil]

Preparation

Step 1

Place the desired amount of grated cheese in a large mixing bowl
Sprinkle some large grind black pepper on top
Add Mayonnaise – I usually add less than I think it will take to start with – you can
always add more mayo – but if you get too much mayo then you must add
extra cheese. [Remember you will be adding the roasted peppers with some juice]
With a large spoon, mix the cheese, mayonnaise and black pepper together – you will
recognize the general consistency – when you think you have the right consistency:
Sprinkle Garlic Powder – Not a lot – just enough to add another layer of flavor to your
pimento cheese recipe – I start out with a small amount – taste – and adjust until
I think I have it right
Remove appropriate amount of Roasted Red Bell Peppers from the jar – with some of the
flavored oil they come packed in. Place on a chopping board and finely chop the
roasted red bell peppers
Add the Finely Chopped Roasted Red Bell Peppers/Flavored Oil to the Pimento Cheese.
Stir the mixture well – taste and adjust for additional pepper, garlic powder, roasted red
bell peppers and/or mayonnaise.
Place in a Tupperware or sealable container – or in a bowl that is tightly sealed with
plastic wrap. The pimento cheese can be eaten right away but it will be much
more tasty if allowed to sit overnight or at least 4 hours.


Excellent to stuff celery with or as a sandwich. For parties serve a combination of
Pimento Cheese in Pumpernickel Bread, White / Wheat Bread, etc. for a
pretty presentation.
If serving Pimento Cheese sandwiches at home, you can add tomato and lettuce. Is
especially good on toasted bread.

* I have added very finely chopped celery into the pimento and also fresh finely chopped jalapeno in the pimento and on top* Not much of either of these --- just a little something different*

* I use Roasted Bell Peppers in my homemade potato salad – I never use pimentos any more – as the Roasted Bell Peppers add such a wonderful flavor….people will want your recipe and the only difference is the substitution of Roasted Bell Peppers for the pimentos that everyone uses ☺!
