Sweet Potato Casserole

similar to casserole served at Sullivans or Mortons Steakhouse

Ingredients

• Topping:
• 4 cups sweet potatoes (bake sweet potatoes for 1 hr at 425, then cool & scrape out) - about 4-5 potatoes
• 1/2 c sugar
• 2 beaten eggs
• 1/2 tsp salt
• 4 tbsp butter
• 1/2 evap milk
• 1 tsp vanilla
• 1/2 c brown sugar
• 1/3 c flour
• 4 tbsp butter softened
• 1/2 c quick oats

Preparation

Step 1

Mix all casserole ingrediants together in mixer. Pour in shallow casserole dish.
Mix all topping ingrediants with a fork until it forms crumb mixture (use softened butter, not melted!) Then sprinkle over top of sweet potato mixture.

Bake 325 for about 30 min uncovered
