Ingredients
- Topping:
- 4 cups sweet potatoes (bake sweet potatoes for 1 hr at 425, then cool & scrape out) - about 4-5 potatoes
- 1/2 c sugar
- 2 beaten eggs
- 1/2 tsp salt
- 4 tbsp butter
- 1/2 evap milk
- 1 tsp vanilla
- 1/2 c brown sugar
- 1/3 c flour
- 4 tbsp butter softened
- 1/2 c quick oats

Preparation
Step 1
Mix all casserole ingrediants together in mixer. Pour in shallow casserole dish.
Mix all topping ingrediants with a fork until it forms crumb mixture (use softened butter, not melted!) Then sprinkle over top of sweet potato mixture.
Bake 325 for about 30 min uncovered
