Stuffed French Toast

Ingredients

  • Apricot Preserves
  • 16 slices of good white bread
  • 6 eggs, beaten
  • 1 cup milk
  • 1/2 cup sugar
  • 1/4 cup orange juice
  • 4 tablespoons, melted butter
  • 1/2 teaspoon vanilla
  • pinch of salt
  • 1/4 cup canola oil

Preparation

Step 1

Spread 1 tablespoon of preserves (or whatever you prefer) between 2 slices of bread, forming 8 sandwiches. Use a circle cookie cutter or glass, cut a circle out of each sandwich. Mix together the eggs, milk, sugar, orange juice, butter, vanilla and salt in a bowl. Dip the sandwiches in the egg mixture until they are well coated. Heat about 2 tablespoons of oil in a skillet over medium heat. Add half of the sandwiches and cook, turning once when browned. Repeat with remaining oil and sandwiches and serve immediately.
