Ingredients
- 1/4 c finely chopped onion
- 1 garlic clove, minced
- 2 tblsp cooking oil
- 3/4 c ketchup
- 1/3 c vinegar
- 1 tsp grated lemon peel
- 1 tblsp lemon juice
- 1 tblsp worcestershire sauce
- 2 tsp sugar
- 1 tsp dry mustard
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp hot sauce
- (2) 2 1/2 to 3 lb chickens

Step 1
Cook onion & garlic in oil until tender but not brown. Stir in ketchup, vinegar, lemon peel, and juice, worcestershire, sugar, dry mustard, salt, pepper, & hot sauce.
Simmer, covered for 30 minutes, stirring occasionally. Quarter chickens. Break wing, hip, & drumstick joints so pieces remain flat. Twist wings under back. Season with salt & pepper.
Place chicken pieces bone side down over med-hot coals. Grill 25 minutes. Turn bone side up, and grill until completed, another 15-20 minutes. Brush w/ sauce for last 10 minutes.
Serves 8.
Dad's notes: 50 minutes on 400. Turn after 30 minutes. Sauce last 10 minutes.
