Ingredients
- 1 meaty smoked Ham Hock, rinsed
- 1 large Carrot, chopped
- 1 large Onion, chopped
- 1 (1 lb) pkg fresh chopped Collard Greens, with tough stems removed
- 1 tsp Garlic, minced
- 1/2 tsp crushed Red Pepper
- 1/4 tsp black Pepper
- 6 cups Chicken Broth
- 1 cup Water

Preparation
Step 1
Place Ham hock, carrot and onion in a 6 quart slow cooker.
Add collard greens. Sprinkle greens with garlic, crushed red pepper and black pepper.
Pour broth and water over collard greens
Cover and cook on low for 8 hours. To serve, remove greens to a serving bowl. Remove meat from ham bone and discard fat and bones. Chop meat and add to greens. Ladle 1 to 2 cups broth over greens.
