Ingredients
- 1 3/4 cup. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. ground allspice
- 1/4 tsp. salt
- 3/4 cup. fat-free milk
- 1/3 cup. sugar
- 1/4 cup. vegetable oil
- 1 tsp. grated lemon rind
- 1 tsp. grated orange rind
- 1 tsp. vanilla
- 1 large egg, lightly beaten
- 1 cup fresh or frozen blueberries
Preparation
Step 1
Preheat oven to 400*.
Combine first 4 ingredients in a med. bowl; stir well.
Make a well in center of mixture.
Combine milk and next 6 ingredients; add to flour mixture, stirring just until moist. Gently fold in blueberries.
Divide batter evenly among 12 muffin cups coated with cooking spray. Bake for 20 mins or until golden brown.
Remove from pans immediately, cool on wire rack.
