Ingredients
- 2 strips thick-cut bacon, diced
- 2 cups Brussels sprouts, trimmed & halved
- 2 cups butternut squash, peeled & cut into 1/2 inch pcs
- 1 shallot, cut crosswise into 1/4 inch slices
- Salt & freshly ground pepper

Step 1
1. Render bacon in a large skillet on high heat. Drain some oil & add Brussels sprouts, butternut squash & shallot.
2. Toss to combine & cook, covered, until browned on all sides & al dente, stirring occasionally.
3. Season with salt & pepper & serve immediately.
