Chickpea Saute with Garlic and Olives

Ingredients

  • 1/2 red onion, chopped
  • 1/2 tablespoon olive oil
  • One 16-ounce can chickpeas, rinsed and drained
  • 1/2 teaspoon dried thyme
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 5 or 6 kalamata olives, pitted and halved

Preparation

Step 1

In a medium saucepan, cook the onion in the olive oil, stirring, over medium heat for 2 minutes. Add the chickpeas and thyme, and cook 1 minute. Add the remaining ingredients and heat through.
