Mexican Honeydew Salad

Ingredients

• 4 c cubed honeydew
• 2 t lime juice
• 1 tsp minced jalapeño
• 1/4 tsp salt
• 1/4 tsp ancho chile powder
• pepitas
• chopped cilantro
• crumbled cotija cheese

Preparation

Step 1

toss the honeydew with the lime juice and minced jalapeños. sprinkle on salt and ancho chili powder; toss. add the pepitas, cilantro and cheese to your liking.
