Ingredients
- 1/4 c. butter
- 1 chopped onion
- 1 med carrot, diced
- 1/2 gr. pepper, chopped
- 1/4 c. flour
- Salt & pepper to taste
- 1 c. boiling chicken broth
- 1 28oz can diced tomatoes
- 1 apple, chopped
- 1 tsp basil
- 1/4 c. chopped parsley
- 3 c. milk
- 1 c. diced cooked chicken
Preparation
Step 1
Melt butter in stock pot. Add onion, celery and green pepper and cook until tender. Sprinkle with flour, salt and pepper, stirring gentle to mix. Cook for one minute. Gradually add broth a little at a time. Stir in tomatoes. Reduce heat and add the apple, basil and parsley. Simmer 30 minutes. Add the milk and chicken. Heat through and serve.
