Ingredients
- 2/3 cup uncooked wheat berries
- 1 diced Granny Smith apple
- 1/2 cup vertically sliced red onion
- 2 oz. chopped walnuts, toasted
- 12 ounces poached salmon, flaked OR
- 4 ounces smoked salmon, thinly sliced
- 2 medium celery stalks, thinly sliced on the diagonal
- 3 tablespoons extra-virgin olive oil
- grated zest and juice of 1 large or 2 small lemons, to taste
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- salt and ground black pepper
- fresh dill
Preparation
Step 1
*Cover* wheat berries with cold water in rice cooker and soak for one hour.
*Cook* wheat berries in water with a pinch of kosher slat, for one cycle on brown rice, until tender but not mushy. *Drain*, rinse under cold water and drain again.
*Combine* oil and remaining ingredients in a small bowl, stirring with a whisk. *Add* wheat berries and remaining salad ingredients except and toss. Gently stir in salmon and serve over mixed lettuce, with optional egg, if using.
