Rotel Casserole

Ingredients

  • 1 lb. ground beef
  • 1 can Rotel chilies and tomatoes
  • 1 lb. box Velveeta cheese
  • 1 onion
  • 1 red or green bell pepper
  • 1 sm. pkg. macaroni (I like the curly kind)
  • Grated cheddar cheese

Preparation

Step 1

Brown onion, bell pepper and ground beef. Make Velveeta cheese dip using Rotel (just melt cheese and add can of Rotel and stir well.) Cook macaroni. Once all is prepared, layer ingredients twice in 9x12 pan-meat mixture, macaroni and Rotel sauce. Sprinkle grated cheese on top.

Bake at 325 just to heat through and melt cheese.
