Shrimp and Beef Skewers with Soy and Scallion Butter

Ingredients

  • Butter:

  • 2

    sticks butter, room temperature

  • 5

    scallions, pale green and white parts only, chopped fine

  • 3

    cloves garlic, minced

  • 3

    tablespoons soy sauce

  • Skewers:

  • cup extra virgin olive oil

  • 4

    cloves garlic, minced

  • 1

    teaspoon salt

  • 1

    teaspoon pepper

  • 1

    lb shrimp

  • 1

    lb sirloin steak ¾ inch thick cut into 1 inch pieces

Directions

Butter: In a food processor combine all ingredients. Shape into log and refrigerate for 30 minutes before use. Skewers: In a small bowl mix olive oil, garlic salt and pepper. Skew steak and shrimp separately. Spoon oil mixture over meat and marinade for 15 minutes. Grill over medium high heat beef for 3 minutes each side and shrimp for 2 minutes each side. May also want to do a mushroom and pepper skew.
