Ingredients
- 3/4 cup dark chocolate pieces
- 12 oz. low fat soft (silken) tofu
- 3 Tbsp. Frangelico (hazelnut) liqueur
- 1/4 cup chopped hazelnuts, toasted
- Fat free whipped topping
Preparation
Step 1
Melt chocolate pieces on medium power in microwave for 1 minute.
Place softened chocolate pieces, tofu and liqueur in blender until smooth.
Spoon mousse into 6 cups. Chill for 1 hour or longer.
For apricots, melt chocolate and dip half of the apricot into the chocolate. Lay on parchment-lined baking sheet. Sprinkle chopped hazelnuts onto chocolate while still melted. Allow to cool.
Garnish with fat free whipped topping, hazelnuts and apricot
