White Bean Mash

Ingredients
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 15 ounces cans white beans, rinsed and drained
- Chicken broth
- 1/2 teaspoon dried thyme, crushed
- 1 teaspoon lemon juice
- Salt and black pepper
- Olive oil

Preparation
Step 1
In saucepan cook garlic in the 2 tablespoons hot olive oil for 1 minute. Stir in beans; coarsely mash. Stir in chicken broth (up to 1/4 cup) to moisten beans. Stir in thyme and lemon juice. Season to taste with salt and pepper; heat through. To serve, drizzle with olive oil. Makes 4 servings.
