Ingredients
- 4 cups arugula
- 1 large fire roasted red pepper, chopped
- 10 Sunsweet yellow cherry tomatoes, sliced in halves
- 1 avacado, chopped
- 1 T. red wine vinegar
- 2 T. olive oil
- 2 T. water
- salt and pepper

Step 1
Mix the red wine vinegar, olive oil, water, salt and pepper. Toss with arugula. Plate and top with veggies.
