Crusty Parmesan & Herb Zucchini

These delicious little numbers will make the perfect healthy side to accompany not-so-healthy but necessary cheeseburgers. I actually put them in a grill pan and do them on the grill when it is too hot to run the oven.
Ingredients
- 4 medium fresh zucchini, cut in half lengthwise
- 1/2 cup fresh grated Parmesan cheese
- 1 tablespoon fresh rosemary, minced
- 1 tablespoon fresh thyme, minced
- 1 teaspoon olive oil
- salt and pepper to taste

Preparation
Step 1
1. Pre-heat oven to 350F
2. Lightly brush both sizes of the zucchini with olive oil and place on a foil-lined baking sheet.
3. Mix cheese and herbs together in a small bowl and sprinkle over the zucchini along with salt and pepper to taste.
4. Bake for 15 minutes and then broil for the last 3-5 minutes until cheese is crispy and brown.
