1. Preheat oven to 400F. 2. Peel potatoes and cut in half. 3. Place potatoes in a large sauce pan and cover with water. Add a pinch or two of salt. Bring to a boil, lower heat and simmer for 5 minutes. 4. Drain potatoes. Toss in a saucepan or colander to roughen their outside surfaces. Let sit for a few minutes to steam dry. 5. Pour oil into a large roasting pan and heat in the oven for a few minutes. 6. Add potatoes to hot oil and turn them gently to evenly coat the surface with oil. Do not place them too close together. 7. Season with salt and pepper as desired. 8. Roast in oven for 30-60 minutes, depending on size. Turn potatoes after 15 and 30 minutes of cooking. 9. Potatoes are cooked when outer surface has turned golden and crispy.
