Chicken Tarragon Salad

Ingredients
- 1/2 cup mayonnaise
- 1/4 plain yogurt
- 1 tsp poppy seed
- 1 tsp fresh tarragon leaves
- 2 (7oz) cans of cooked chicken breast, rinsed and drained
- 1 cup seedless red grapes, halved
- 2 rib of celery, chopped
- 1/4 cup chopped walnuts or pecans
- 6 cups spring mix lettuce

Preparation
Step 1
1. Whisk together Mayonnaise, yogurt, poppy seed and tarragon to make dressing. Set aside.
2. In another bowl combine chicken, grapes, celery and nuts. Pour ½ cup of the dressing over the mixture and stir to combine.
3. Put Spring lettuce in a bowl with ¼ cup dressing and toss to coat.
4. Arrange 1 ½ cup spring mix on each plate, Top with 1 cup of chicken mixture and serve with remaining dressing on the side.
