Ingredients

  • ½

    cup mayonnaise

  • ¼

    plain yogurt

  • 1

    tsp poppy seed

  • 1

    tsp fresh tarragon leaves

  • 2

    (7oz) cans of cooked chicken breast, rinsed and drained

  • 1

    cup seedless red grapes, halved

  • 2

    rib of celery, chopped

  • ¼

    cup chopped walnuts or pecans

  • 6

    cups spring mix lettuce

Directions

1. Whisk together Mayonnaise, yogurt, poppy seed and tarragon to make dressing. Set aside. 2. In another bowl combine chicken, grapes, celery and nuts. Pour ½ cup of the dressing over the mixture and stir to combine. 3. Put Spring lettuce in a bowl with ¼ cup dressing and toss to coat. 4. Arrange 1 ½ cup spring mix on each plate, Top with 1 cup of chicken mixture and serve with remaining dressing on the side. Serves 4
