Cobb Salad

Ingredients

  • 2 cups mixed greens
  • 1 hard boiled egg, sliced
  • 2-3 oz. grilled chicken breast, chopped (optional)
  • 2 pieces crisp bacon, chopped
  • 8 yellow cherry tomatoes, sliced in half
  • 8 red cherry tomatoes, sliced in half
  • 1/2 avocado, chopped
  • 1 T. extra virgin olive oil
  • 1/2 T. balsamic vinegar
  • salt and pepper

Preparation

Step 1

Mix olive oil, vinegar, salt and pepper. Toss with mixed greens. Plate and top with remaining ingredients.
