Ingredients

  • 2

    15 ounce cans garbanzo beans, drained

  • 1/2

    cup parsley leaves

  • 1/3

    cup plain breadcrumbs

  • 1 1/2

    teaspoons ground cumin

  • 1/2

    teaspoon salt

  • 1

    egg

  • 2

    tablespoons EVOO

  • 4

    hamburger buns

  • lettuce, tomato and mayo, for topping

Directions

In food processor, puree first 6 ingredients; form 4 patties. In skillet, heat EVOO over medium; cook patties, 3 minutes per side. Serve on buns with toppings.
