White Dirty Rice

Ingredients

• 1 1/2 lbs hot sausage (4 long links)
• 2 TBSP butter
• 1 med green pepper
• 1 large onion
• 1 TBSP minced garlic
• 4 cups chicken broth
• 2 cans kidney beans drained
• 1/4 tsp cayenne pepper
• 1/8 tsp ground red pepper
• 1/4 tsp black pepper
• 1/4 tsp salt
• 1 1/2 cup Uncle Bens Rice

Preparation

Step 1

Remove sausage from casings, break apart and brown.
Remove sausage from pan.
Add butter, green pepper, onion and garlic and sauté on low until tender. Add chicken broth, kidney beans and seasoning.
Bring to slow boil.
Add rice, lower temp and cover.
Cook an additional 20 minutes.
Let set for 5 minutes and serve.
